So last night Mr. Newman wanted carnitas and frankly I didn’t have time to make it because it takes 6 hours! So tonight we had them instead.
I’m all for a good Mexican recipe. My husband has broadened his taste for Mexican food since I’ve known him. Plus if we ever have his brother and his family over we’ll have plenty of food because I swear they live on Mexican food.
I came across this particular recipe from Tasty Kitchen by a lovely woman named Aimee. I happened to browse around her blog and found that she has a recipe for chocolate glazed and strawberry frosted donuts…but that’s for another time.
Here’s the ingredients, I modified mine a tish just because there’s only 3 of us that can actually eat it. So I minimized the amount of ingredients that would be needed for about 6 servings..but the ingredients below are for 8 servings.
- 4 pounds Pork Tenderloins
- 4 cloves Garlic, Pressed
- 2 teaspoons Olive Oil
- 1 teaspoon Salt
- ½ teaspoons Black Pepper
- 1 teaspoon Ground Cumin
- 1-½ cup Cilantro, Snipped
- 1 cup Salsa, Use Any Variety
- ¼ cups Chicken Broth
- 1 can (4 Oz. Size) Chopped Green Chilies
- 1 whole Orange, Juiced
- 12 whole Flour Tortillas, Warmed, To Serve
Basically you throw everything except for the tortillas in the crockpot, put it on high for 6-8 hours. Shred the pork, and then cook it a bit longer to make sure it’s cooked all the way through.
I checked about 5 1/2 hours to see how it was doing and shredded it then and then let it cook for about another 1/2 hour.
Then serve it on warmed tortillas with your favorite fixings. It’s not Chipotle or Qdoba but it’s yummy and saves you money!!
