Cupcake of the Month: Green Eyed Monster

I’m going to start something new and fun. Well fun for me because I get to enjoy it and I’m sorry that you won’t be able to so much. I mean if I could share food through the internet I totally would. But I can’t. And that’s sad. Because there are so many food things on the interwebs that I would love to try or have for that matter.

What am I ranting on about?


I’m going to start a new post series I guess you could say called Cupcake of the Month.  Because we all know how much I love cupcakes. Every month on the 23rd, I’ll have a new post on a cupcake that I will make for that month. Some will be new recipes that I’m trying out or they’ll be old favorites. Teehehe. So excited!!

I had bought this magazine like 2 years ago and flipped through it but never did anything with it. DSC_0084 copy

After cleaning off one of our bookshelves I found it again and thought Hey, I should look through this bad boy and see if I’d actually make anything out of it. That’s what started Cupcake of the Month.

This month is about the green eyed monster!!


Being as it is October I thought I’d do a Halloween themed cupcake.

But it so did not turn out that way.

For starters I thought we had the big marshmallows that it says you’re supposed to use. So did not have that.

Then I was supposed to use neon green food coloring. I was being lazy and didn’t want to make the billionth trip to the grocery store for these cupcakes. So not worth it in my book.

Then it says to use chocolate covered mints. Um…I don’t like chocolate covered anything. Unless it’s strawberries but other than that, no. Or peanuts. But that’s it.

So what does Steph do? She improvises. Yep I do!

It’s not exactly the same but he’s my little green eyed monster. I did end up using marshmallows but it was the tiny ones and I used chocolate chips for the little pupils of the eyes.

Easy peasy.

Cupcake of the Month: Green Eyed Monster


  • Favorite cupcake recipe- I used carrot cake
  • Favorite frosting recipe - buttercream, whipped or cream cheese- I used Martha Stewart's cream cheese frosting
  • neon green food coloring
  • marshmallows
  • chocolate candy


Make and bake cupcakes to directions provided in your favorite recipe instructions

Make frosting per the directions in your favorite recipe

Add in green food coloring to your frosting.

Pipe frosting onto your cupcakes. I used tip #233.

Take your chocolate candy and smush them in the middle of the marshmallow.

Place marshmallow and chocolate candy on top of cupcake.

Pipe more frosting around the marshmallow and chocolate candy.
