Red Velvet Cupcakes

Today is my birthday. And I’m sick. Awesome.

Good thing I didn’t have much going on today. I was going to run to the post office and mail some stuff off but I’ll see about that if I’m feeling better later on.

So last week I mentioned that I had already made my birthday treat and here it is. Good thing I made it last week, because I don’t know if I’d want to do it today.

They’re red velvet cupcakes. Oh so yummy!

I have no idea where I found the recipe. But I love them.  I think I found the recipe a long time ago when I was watching the food network or some cooking show and they were always using red velvet and I wanted to try it. Once I made these and tried them, I made them my favorite cupcake ever.

The first time I made it I made a ginormous mess. I mean ginormous mess. Now that I knew what I was expecting I could keep the mess under control.

I did make a little bit of a mess but it was mostly the frosting.

 

Here’s the recipe:

1 pkg red velvet cake mix

1 pkg (3.9 oz) jell-o chocolate instant pudding

1 pkg (8 oz) cream cheese, softened

½ c. butter, softened

1 pkg (16 oz) powdered sugar ( about 4 cups)

1 cup thawed cool whip, thawed

Prepare cake batter and bake as directed on package for 24 cupcakes, blending dry pudding mix into batter before spooning prepared muffin cups. Cool.

Beat cream cheese and butter in large bowl with mixer until well blended. Gradually beat in sugar. Whisk in cool whip. Spoon 1 ½ c into small piping bag. Pipe about 1 T frosting into center of cupcake.

Keep refrigerated.

 

You really need to make these. They are delicious!
