Yesterday it was Mr. N’s birthday.
It was a milestone one.
The big 3-0.
He doesn’t care. He’s a no frills kind of guy. He moves on with his day as if it’s an ordinary day.
I don’t. I love celebrating my birthday. This year it’ll be a milestone for me too. (The same one). I’m going to go all out! But enough about my birthday. It was Mr. N’s yesterday.
We didn’t do anything special yesterday. Went to Chipotle and drove around. Then we went to one of our church friends’ for supper where the husband made a delicious meal!
I did however make him some delicious cuppy cakes.
Mmm mmm mmm.
I found this tasty recipe while browsing on Pinterest.
Anyway. They’re made with Oreo’s, how can you go wrong?
I think my father-in-law would enjoy these. He loves cookies and chocolate, especially Oreos.
Here’s the recipe for you to try it for yourself!
- 1 package Oreo Cookies, regular size
- 1 package Mini Oreo Cookies, for decoration (optional)
- 1 package chocolate cake mix (mix according to directions on box)
Preheat oven to 350 degrees. Mix packaged cake mix according to directions (do not bake). Line cupcake tins with liner, place a regular size Oreo cookie in the bottom of each liner. Take 1/2 of remaining cookies and chop coarsely and add to cake mix.
Fill the cupcake tins. Bake for 15 minutes (or according to box directions. While cupcakes are baking make the frosting. Bake cupcakes for about 15-18 minutes or until toothpick comes out clean.
Use your favorite buttercream frosting, or if you want to be adventurous you can use your favorite cream cheese frosting and just add in chopped up Oreos to make it an Oreo frosting( I would recommend using a food processor to crush it real fine).
Try them, they’re so yummy!
