Peanut Butter Blossoms

Ahh it’s that time of year again.

Christmas is just 8 days away.

That means last minute shopping to do for the special people on your list, last minute preparations you need to make for your Christmas get together with your family. But for us we’ve been done pretty much since last weekend all thanks to my big bro who came to watch the munchkins so we can go shopping.

So anyway this is what String Bean and I did today, while the little guy was supposed to be sleeping.

String Bean had the easy part. Putting the kisses on the cookie.

Pretty easy recipe. You can find it anywhere on the interwebs.

I’d like to think of it as a fun and easy Christmas cookie. Don’t get me wrong I love the thought of traditional sugar cookies with the frosting, remember I said the thought of it. I just hate the process of it. Making the cookies, cutting them out, frosting them. Oy! This is sooo much easier!

Peanut Butter Blossoms

48 Kisses {or chocolate stars}

1/2 c. shortening

3/4 Creamy PB

1/3 c. sugar

1/3 packed brown sugar

1 egg

2 T milk

1 tsp. vanilla

1 1/2 c. flour

1 tsp. baking soda

1/2 tsp. salt

Heat oven to 375. Remove wrappers from chocolates.

Beat shortening and PB in a large bowl until well blended. Add 1/3 c sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.

Shape dough into 1-inch balls. Roll in sugar; place on ungreased cookie sheet. Bake 8-10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies{ I ended up with 3 but that’s ok}.
