The best kind of meals are the ones that are super easy to make and can be done in a short amount of time. Especially when you have activities that after shortly after supper. I came across this recipe from Kevin and Amanda on Pinterest a couple of months back and never had the chance to make it, until now. I’m glad I did, it’s soo yummy! And what’s not to like about it? It’s got sausage, pasta, tomatoes, cheese and more cheese. MMmmm cheese. And it’s got a bit of kick to it too. Not too much though, I’m not a spicy food kind of gal, but this is delish!
I’m usually a little hesitant with new recipes just for the fact that most of the time I find them on Pinterest and they sound so good and then I try them and it just never turns out. For example, this last week I had made Doritos crushed chicken fingers, sounded so good. I mean it has Doritos on it right? Gotta be good. WRONG!! It had no flavor what-so-ever. I could have done something wrong with it, but it was just bad. I was really upset, I wasted a whole bag of Doritos. This one however, I’m glad did. It’s staying in my recipe book!
Basically what you do here is you heat up a pan with a lil olive oil, until its nice and hot. Add in your sausage and onions.
Throw in some heavy cream, tomatoes, pasta, chicken broth and some seasonings and let it simmer for bit. After that, throw some cheese in the mixture.
Here’s how my recipe changed from the original. I don’t have one of those fancy cast iron skillet so I had to throw my mixture in a baking dish, because you’re eventually going to throw it under the broiler for a few after you’ve added some more cheese to the top.
Yes you heard me right, more cheese.

I think this one has become one of our new favorites. So good!!! And the best part of this is that you don’t have to boil the pasta before you mix it all together!! I love recipes like this.
Spicy Sausage Pasta
1 tbsp olive oil
1 lb smoked sausage
1.5 cups diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 (10 oz) can Rotel tomatoes and green chiles, Mild
1/2 cup heavy cream
8 oz penne pasta
1/2 teaspoon salt and pepper, each
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions
1. Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
3. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.
